The Lunda Room (AMU 2nd floor) will celebrate the tastes of Italy January through early February as part of their rotating monthly heritage cuisines. Make a lunch date to enjoy the following featured menu items this month:
- Insalata di Spinaci - Baby spinach, apple-pear compote, red onion, proscuitto, parmesan and balsamic vinaigrette
- Formaggio di Capra Fritto Salad - Lemon-honey goat cheese, roasted golden beets wtih field greens tossed in lemon shallot vinaigrette
- Chicken Gabriella - Sauteed chicken with onions, mushrooms and artichoke hearts in rosemary and sage sauce on a bed of roasted potatoes
- Italian Sausage and Mussel Ragout - Sauteed mussels, Italian sausage, tomatoes and onions in garlic tomato broth served with grilled pizza bread
