Slow food catches on
Getting together for Friday night pizza isn’t unusual for college students. But members of Slow Food Marquette may put the pizza delivery guy out of work. They promote home cooking with locally grown products and more sustainable methods of food preparation.
“I am motivated to keep making informed food choices because I know there are students I can not only eat with but build friendships with through Slow Food,” says student Lydia Roussos.
Slow Food Marquette formed after students in a capstone course created an advertising and public relations campaign for Slow Food Wisconsin Southeast. The course was team taught by J. William and Mary Diederich College of Communication Professional in Residence Linda Menck and Associate Professor Dr. Gee Ekachai. Both teachers say they’re always impressed with student campaigns, but they don’t remember a time when students bought into a concept so strongly that they started a campus organization.
“It’s one thing to take an assignment and fulfill the requirements, but they went above and beyond,” Menck says. “They recognized the importance of the Slow Food message and, through the new student organization, will help bring social change to how we think about food on campus.” — ATB
